I have said this before and I will say it again, we love going to an all-vegan restaurant! There is no trying to figure out what we are going to eat. We were down in the Highlands Ranch area and were getting hungry. We had marked a place down here called Total Vegan Indian Restaurant and decided to try it. If you’re a vegan or someone looking to explore the world of plant-based cuisine, put Total Vegan Indian on your list of places to try. They bring together the rich and vibrant flavors of India with a compassionate and a plant-based approach to food, and they knocked it out of the park.
The place is located in a shopping mall area in the Highlands Ranch and is tucked away on the back side of Noodles and Company. When you walk in, the place is simple, clean and modern. It appears that you can order right from the front counter area, but we took a seat and the server came to take our order. He was very friendly and had many recommendations of what the most popular dishes were. Again, what do you order when you can get anything off the menu?
We decided to get a few appetizers and share a main dish. We ordered the Vegetable Pakora, a fried vegetable fritter battered in a chickpea flour. It comes with a mint chutney and another sauce that I am not sure what it is called, but we think it was tamarind chutney. They were delicious and we were surprise how much you got the price. Second, we ordered a small bowl of the Lentil Soup, it is yellow lentil soup with shredded vegetables. That was pretty good too but we felt that it needed a little more seasoning. We added some black pepper and a little of the extra hot sauce that they brought with the main meal. That seemed to add a good flavor to it.
For the main meal we had a hard time trying to figure out what we wanted, everything sounded good. Many of the options we have tried before so we wanted something a little different, we ended up trying the cabbage chana. It is finely chopped cabbage and Indian chickpeas with house ground spices. We have had other chana before but not with the cabbage. That was a good touch to this meal and it too was delicious. No Indian meal is complete without the indulgence of freshly baked bread. We ordered the Tawa Roti, a whole-wheat bread cooked on a flat iron griddle. It was a good addition to the meal.

Overall, we were highly impressed with the service and the food here and will be back for sure when we are down in this area.
