On a quest to find the best vegan Pho!

In Denver we used to get takeout from a Pho place downtown called “What The Pho”. They had one of the best vegetarian pho bowls that we have found. We got that to go at least a couple times a month. It had a very good spicy vegetable broth, with lots of noodles and vegetables. I am not 100% that it is vegan but from what I can tell there is nothing in it that would not make it vegan.

Anyway, we have been looking for a place here in the Seattle area that might replace what we loved in Denver. I recently was picking up Heather from the airport and we needed to get something to eat before heading home. I researched around the airport area and found a place in the Burien area called Pho Vina, their website showed that they had a lot of vegan options. In fact, they have a whole separate vegan/vegetarian menu which is nice. We decided to try it out.

Since it was getting later in the evening, we decided not to order a lot and just share a large bowl of the Tofu & Veggies Noodle Soup. It has rice noodles and a fair amount of vegetables. The bowl was more than enough for us to share, but I knew if I were really hungry that I could finish this on my own. They had a lot of other vegan options, I was tempted to order some and try, but we passed for now. Maybe we can come back and try some other options in the future.

The soup was very good but we found that it came out not very seasoned. In fact, the chopstick holder on the table stated to taste the soup, add spices to your liking and enjoy. At first, I was not sure that I liked that but after thinking about it, I kind of liked that. It allows each person to decide how spicy or hot they would like it. Most of the time I add hot sauce or spices to mine anyway. They had sriracha and hoisin sauce at the table so there were not a lot of options but those seemed to do the trick. I am sure that if I asked for others, they would provide them.

In the end the meal was very good, I am not sure that it will replace our go to place that we liked in Denver but it was very close. Now that I know what to expect when it comes out and that I need to spice it up, I am good with that. I would like to go back and try some of their other vegan options that they had.
