If you are looking for a cozy and casual place to enjoy some delicious pizza in Steamboat Springs, Colorado, you should definitely check out Brick. Located on Bangtail Way at the base of the Wildhorse Gondola, this restaurant offers a variety of pizzas, salads, and sandwiches, made with fresh and quality ingredients. However, it is not the most vegan or plant based friendly place in town, there are one or two options that would suffice.

We visited Brick on a Friday evening, and the place was not too crowded, but the service was friendly and efficient. But we did get there right as it was opening at 5pm, we didn’t have reservations, which is recommended, but they were able to seat us right away. The menu had a lot of options, from classic and specialty pizzas to build-your-own pizzas. We decided to order the Pomodoro pizza, which comes with no cheese and just veggies. I did ask and the dough is vegan, just flour, yeast and salt. We did however step out of our diet box and ordered an appetizer of Bruschetta. It comes with cherry tomatoes, olive oil, basil and parmesan all topped on a bread. The cheese is not vegan and I think that we had more cheese in that sitting that we have had all year. In fact, I picked off some of it. I think that you can request that the parmesan be left off and I am sure it would be just as delicious. The bread and ingredients were fresh and each bite was flavorful.

The Pomodoro pizza was a 12-inch pie, with a thin and crispy crust, topped with roasted garlic oil, cherry tomatoes, and basil. We also added mushrooms and artichoke hearts. It was baked in a brick oven, which gave it a nice char and smoky flavor. It was rich and tangy, made with fresh tomatoes, basil. The cherry tomatoes added a burst of juiciness. The artichoke hearts and mushrooms added some texture and earthiness, while the basil added some freshness and aroma. The pizza was light and flavorful, and perfect for vegans or anyone who loves veggies.

Overall, we had a great dining experience at Brick. The pizza was delicious, the service was attentive, and the ambiance was relaxed. We would highly recommend this place to anyone who loves pizza or wants to try something new and different. We would definitely go back and try other options.
