Where to Find the Ultimate Vegan Pho in Seattle – Grill Pho Viet Anh

Tết in Seattle – Vietnamese Lunar New Year, which took place on January 25-26, 2025, at the Seattle Center Armory Food & Event Hall and Fisher Pavilion. This annual festival celebrates Vietnamese culture and traditions, featuring arts, music, hands-on experiences, and unique performances. It’s part of the Seattle Center Festál series and is free and open to the public. We decided to check it out and see if they had any vegan options that we could try. However, we were a little disappointed to find that there were not that many options for us. With Vietnamese food on our minds, we started a search for something similar in that local area that had vegan options. Seattle’s food scene is packed with hidden gems, and we were craving a comforting bowl of pho or fresh Vietnamese flavors. We found not too far from the Space Needle a place called Grill Pho Viet Anh.

We started with the tofu salad rolls, which were light, refreshing, and packed with fresh herbs, crisp veggies, and soft tofu wrapped in delicate rice paper. The real highlight? The dipping sauce is a rich, nutty peanut sauce with just the right touch of sweetness. Every bite was fresh and flavorful, making for a perfect appetizer before diving into our pho.

Next up was the vegan pho, it was everything you want in a warm, nourishing bowl of soup. The broth was aromatic and deeply flavorful. It had that classic pho essence, savory, and slightly sweet, without relying on meat-based ingredients. The bowl was loaded with silky rice noodles, tender tofu, and a variety of vegetables, including broccoli, carrots, and bok choy, all soaking up the broth. Of course, no pho experience is complete without the plate of fresh herbs and toppings on the side. Thai basil, bean sprouts, lime, and jalapeños, let us customize each bite to our liking.

Grill Pho Viet Anh offers some fantastic vegan-friendly options for traditional Vietnamese cuisine. The tofu salad rolls were crisp and fresh, and the pho was a warm, satisfying bowl of goodness.
