If you are looking for authentic and delicious Indian food in Steamboat Springs, Colorado, you should definitely check out Saffron Indian Restaurant. Located on Lincoln Avenue, this restaurant offers a variety of dishes from different regions of India, made with fresh and quality ingredients.

We visited Saffron on a weekday evening, and the place was quite busy, but the service was prompt and courteous. The menu had a lot of vegetarian options from appetizers and soups to curries and biryanis. They may or may not be vegan, so if you have dietary restrictions make sure to ask. We decided to order the Aloo Gobi, the Veggie Pakora, and an order of Roti. All of these seem to be our go to options which usually are vegan.

The Veggie Pakora was a plate of mixed vegetable fritters, made with chickpea flour, spices, and herbs. They were crispy, light, and addictive. They came with a mint-cilantro chutney and a tamarind chutney, which complemented the pakoras very well. The chutneys were fresh, zesty, and sweet. The pakoras were a perfect snack to munch on while waiting for the main course.

The Aloo Gobi is a dish of potatoes and cauliflower cooked with onion, tomatoes, and spices. It was very flavorful, aromatic. The potatoes were soft and the cauliflower was slightly crunchy, which added a nice texture contrast. The portion was generous and satisfying.

The Roti is a round flatbread made with whole wheat flour and cooked on a griddle. This is the vegan option when going to an Indian restaurant, just make sure that they don’t add butter to it. It was soft, warm, and fluffy. It was great for scooping up the Aloo Gobi and the chutneys. The Roti was also very filling and wholesome.

Overall, we had a wonderful dining experience at Saffron Indian Restaurant in Steamboat Springs. The food was tasty, the service was friendly, and the ambiance was cozy. I would highly recommend this place to anyone who loves Indian food or wants to try something new and different. We would definitely go back and try more dishes from their menu.
